Chef Justin Song-Ell, known for his innovative, globally inspired dishes at Elephant, is making a bold shift by embracing plant-based cuisine for this collaboration.

His usual cooking at Elephant highlights vegetables but often incorporates offal and bold flavors from meat and fish.

This plant-based approach will be a fresh challenge, offering a unique contrast to his usual fare.

Expect exciting interpretations of his techniques—like intricate flavor layering and meticulous ingredient preparations—now focusing entirely on vegetables, all while blending Asian influences with European culinary ideas.

She continues to research and study internationally, including an internship at Noma's sister restaurant, Inua,Tokyo and taking food industry sustainability courses at the Mad Academy Copenhagen.Her culinary exploration continues as she seeks new inspirations and knowledge from around the world.
